This tomato soup will be your favorite. Anatolian cuisine has a lot of variety of soups. In Anatolia, there is always a soup as a starter on the tables.  1 kg tomato(ripe ones should be preferred)
 3 tbsp olive oil
 1 tbsp butter(if you don't want to use butter, you can substitute 1 tablespoon of olive oil instead)
 3 tbsp flour
 6 tsp salt
 ½ tsp black pepper
 1 tsp dry mint
 ½ tsp dry thyme
 1 tsp red powdered pepper
 3 garlic cloves(crushed in a mortar or grated with the fine side of a grater)
 50 g cheddar cheese(to put on top when serving)

How to Make Fresh Tomato Soup?

First, peel the skin of the tomatoes and blend them very well until smooth. In the meantime, run the heater as you will need hot water.

Put the olive oil, butter, spices, grated garlic and flour in the pot where you will make the soup and fry them all together for 5 minutes.

When the wonderful smell of garlic, spices and flour comes, add the tomatoes you blend into it and continue to mix until it starts to boil so that there is no lumps. Boil it for 10 minutes.

Since the consistency will thicken after boiling, add the boiled water gradually until it reaches the consistency you prefer. Of course, also add hot water by mixing it.

Meanwhile grate cheddar cheese in a bowl.

Your soup is ready after boiling for 10 more minutes.
